A delicious moment in the middle of a glass roof... The restaurant at Château de la Dame Blanche is housed in a large Victorian-style glass roof offering a panoramic view over the park. It is in this pleasant setting that Antony Serra's menu is presented. It's a short, original menu, where the culinary proposals are peppered with regional flavours. For example, the Doubs-inspired pike-perch with pommes boulangères and Morteau is served with a yellow wine sabayon. Reading the menu is a pleasure in itself. Starters, fish, meats, cheeses and desserts, each step whets the appetite. An invitation to sit down and eat.
Delicate, inventive and delicious. The chef's creativity and curiosity are always on the alert. He's constantly on the lookout for new combinations of flavours. They give flavour and colour to his very 'natural' dishes, whose tastes change with the seasons. Antony Serra likes to work with small local producers, focusing on the quality of the produce to ensure that his dishes are simple, tasty and responsible.
